1000 points of light (a tribute to Bruce Dickinson)

50g groats,
2 big leaves cos lettuce
washed and dried

2 handfuls of rocket,
washed and dried,

1 ripe plum tomato,
juice of ½ lemon
1 slice of smocked prosciutto

aged balsamic vinegar

sea salt

Place the groats into boiling water and cook for 2 or 3 minutes until tender.Strain groats and mix with lemon juice and sea salt. Serve in the two lettuce's leaves.Cut your tomato into small pieces and mix them in a bowl with rocket, balsamic vinegar and sea salt. Serve them over groats and add the prosciutto into pieces.
